{"id":114532,"date":"2022-11-11T22:55:37","date_gmt":"2022-11-11T21:55:37","guid":{"rendered":"https:\/\/imperiumromanum.pl\/?post_type=ciekawostki&#038;p=114532"},"modified":"2022-11-11T22:55:37","modified_gmt":"2022-11-11T21:55:37","slug":"pears-in-roman-cuisine","status":"publish","type":"ciekawostki","link":"https:\/\/imperiumromanum.pl\/en\/curiosities\/pears-in-roman-cuisine\/","title":{"rendered":"Pears in Roman cuisine"},"content":{"rendered":"<p>Pears were known and used in ancient <a href=\"https:\/\/imperiumromanum.pl\/en\/roman-geography\/roman-cities\/rome-eternal-city\/\">Rome<\/a>. <a href=\"https:\/\/imperiumromanum.pl\/en\/biographies\/pliny-the-elder\/\">Pliny the Elder<\/a> states that there were 41 known varieties of pear, each of which had a different taste, appearance and name. They were known, for example &#8220;Tiberian&#8221;, from the name of Emperor <a href=\"https:\/\/imperiumromanum.pl\/en\/biographies\/tiberius\/\">Tiberius<\/a>, or &#8220;Falernian&#8221;, from the Falernum wine, known for its sweet taste.<!--more--><\/p>\n<p>Pears were eaten in a variety of ways, often added to spicy or sweet dishes for flavour. Interestingly, we also know that the Romans in the 4th century CE started using pears to make <em>garum<\/em>. Let us recall that <em>garum<\/em> was an extremely intense and foul-smelling sauce made of the remains of fermented fish, which was used at meals. It was a kind of ketchup or mustard.<\/p>\n<p>Palladius, a 4th-century Roman writer, gives a recipe for getting <em>garum<\/em> from pears. Ripe pears had to be grated, mixed with salt and made into a pulp that had to be left in the dish and covered. After three months, the flesh had to be separated from the liquid. <a href=\"https:\/\/imperiumromanum.pl\/en\/curiosities\/apparently-donuts-were-already-loved-by-ancient-romans\/\">Apparently<\/a>, the resulting consistency had a white colour and a pleasant taste.<\/p>\n<p>In order to prevent pears from rotting, Roman writers (eg Columella) recommended that pears be placed in honey or <em><a href=\"https:\/\/imperiumromanum.pl\/en\/curiosities\/defrutum-and-lead-problems\/\">defrutum<\/a><\/em> (boiled must).<\/p>\n","protected":false},"featured_media":49073,"template":"","meta":{"_acf_changed":false,"footnotes":""},"kategorie_ciekawostek":[85],"class_list":["post-114532","ciekawostki","type-ciekawostki","status-publish","has-post-thumbnail","hentry","kategorie_ciekawostek-food"],"acf":[],"_links":{"self":[{"href":"https:\/\/imperiumromanum.pl\/en\/wp-json\/wp\/v2\/ciekawostki\/114532","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/imperiumromanum.pl\/en\/wp-json\/wp\/v2\/ciekawostki"}],"about":[{"href":"https:\/\/imperiumromanum.pl\/en\/wp-json\/wp\/v2\/types\/ciekawostki"}],"version-history":[{"count":0,"href":"https:\/\/imperiumromanum.pl\/en\/wp-json\/wp\/v2\/ciekawostki\/114532\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/imperiumromanum.pl\/en\/wp-json\/wp\/v2\/media\/49073"}],"wp:attachment":[{"href":"https:\/\/imperiumromanum.pl\/en\/wp-json\/wp\/v2\/media?parent=114532"}],"wp:term":[{"taxonomy":"kategorie_ciekawostek","embeddable":true,"href":"https:\/\/imperiumromanum.pl\/en\/wp-json\/wp\/v2\/kategorie_ciekawostek?post=114532"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
