In Georgia, on the site of the former Roman fort (castellum) in Apsarus, excavations have been carried out since 2014. Recently, traces of an ancient vineyard have been discovered.

As the researchers explain, the ancient wine fermented in ceramic vessels underground, and the taste of the wine, in turn, differed depending on the storage time and the tank in which it was stored. Overall, however, the wine was earthy and sweet.

It is worth mentioning that the fort is proof of the military presence of the Romans in the region. castellum is mentioned, among others, in Pliny the Elder.
